Since joining Hotel Endsleigh in July 2023, Sam has become an invaluable member of the team. Starting with no prior professional experience, he has embraced the fast-paced environment of a professional kitchen, rising to the challenge with enthusiasm and determination. His hard work was rewarded when he was entrusted with the role of Breakfast Chef, a moment he considers a defining milestone in his career.

Sam’s passion for cooking began in childhood, baking with his mum—a memory that sparked a lifelong fascination with food. Over the past year, he has honed his skills, taking particular pride in mastering game bird butchery, ensuring minimal waste while developing a key culinary technique.

With a keen focus on organisation and precision, his dedication to learning is evident in his ambition to specialise in Modern British and New Scandinavian cuisine, drawing inspiration from seasonal and foraged ingredients.

Beyond the kitchen, Sam’s love for food has led to some memorable encounters—including meeting Angela Hartnett at the Padstow Christmas Food Festival, where she personally cooked him her signature lobster pasta. If given the chance, he would love to cook for Syd Barrett of Pink Floyd, believing a meal with the enigmatic musician would be an unforgettable experience.
