Chef de Partie

Location The Star

As Chef de Partie, you will be assisting the Head Chef & Sous Chef in the responsibility of all the highest professional quality food production, including all items produced for The Dining Room, The Inn & Lounge, Terraces, Room Service & Banqueting. The Chef de Partie also helps the management lead the development and monitoring of training, hygiene standards, and a culture of creative excellence.

Primary Duties

-To assist in the food preparation and culinary activities to the highest professional quality for all food production at the hotel. Including all items produced for; The Dining Room (60 covers), The Inn & Lounge (approx. 70), Terraces (approx. 100) Room Service (29 Rooms) & Banqueting (One event space with a capacity: dining 30-60 & reception 100)
-To assist the Head Chef & Sous Chef in creating, developing and updating all menus in keeping with The Star’s culinary offering, quality expectations and ethos
-To assist the Head Chef & Sous Chef in understanding what food products and other necessary supplies need to be requested and purchased.
-Be a leader in the development and monitoring of the departmental training, hygiene standards, and a creative excellence culture

General

-Conducts business matters in a professional, ethical, and courteous manner
-Be proactive in all environmental programmes within the hotel, including recycling, waste management, chemical management and energy management.
-Dresses in an appropriate professional style following The Star’s standards.
-To instil a high level of integrity within the team
-To carry out any other reasonable tasks requested by the Sous Chef & Head Chef
-To prevent food contamination by practising good chemical food and personal hygiene habits
-To maintain a high standard of personal hygiene and grooming at all times, ensuring that your designated uniform is worn, well pressed and in a good state of repair at all times.

-Meals whilst on duty-28 days holiday per year increasing after 2 years employment to 30 days
