We are looking for a highly professional and enthusiastic Sous Chef to join our Kitchen Team at our 29 bedroom hotel, The Star in Alfriston. We are set at the foot of the East Sussex Downs and on the banks of the Cuckmere River.

Job Description

-Sous Chef
-£43,000 PA
-Equal share of service charge (approx. £5,000 pa)
-28 Days annual (inclusive of bank holidays) additional 2 days after 2 years service
-48 Hours p/w
-Live in accommodation for the first 3 months
-Inclusion in the NEST pension scheme after your probationary period
-30% off Food & Beverage when dining at any of the three hotels in The Polizzi Collection
-Preferential accommodation rates at any of the three hotels in The Polizzi Collection
-This is a full time position for 48 hours per week, 5 days a week.

About the role

-To assist the Head Chef in planning and directing food preparation and culinary activities to the highest professional quality for all food production at the hotel. Including all items produced for; The Dining Room (60 covers), The Inn & Lounge (approx. 70), Room Service (30 Rooms), Banqueting (One event space with a capacity: dining 30 & reception 80) and two Terrace (100 covers)
To assist in creating, developing and updating all menus in keeping with The Star’s culinary offering, quality expectations and ethos
-Assisting the Head Chef in managing and monitoring the requisition and purchase of all food products and other necessary supplies. Confirming the sourcing strategies are of the highest professional quality, seasonality and locally sourced where possible
-Leading the development and monitoring of the food and labour budgets for the department, departmental training and hygiene standards
-Ensure the kitchen is a secure, safe and inspirational learning environment for all of the kitchen team
-To proactivity motivate, encourage teamwork and provide direction to all team members and lead by example

About you

-We are looking for an enthusiastic team player, positive attitude and capable with a passion for cooking.

-Minimum 5 year experience

-A confident, professional and welcoming personality.

-Passionate about the hospitality industry.

-An attention to detail and accuracy of work.

-Effective communicator with an ability to build strong internal and external relationships;

-Excellent grooming standards.

-An ability to work under pressure and resilience.

-Capable of multitasking.

-Must have your own transport due to the location.
