Starter
Gin Cured Chalk Stream Trout
Avocado crema, grapefruit granita, watercress, gin washed roe
Prosciutto wrapped Figs
Blue Clouds cheese, honey, sage crocante
Beetroot and Sussex goat cheese tart, bitter leaf salad, walnuts.
Main course
Guinea Fowl
Lemon, thyme and fennel sausage meat, pigs in pancetta blankets, braised red cabbage bread sauce, gravy
Roasted Loin of Cod
Borlotti and rosemary ragu, leeks, pangrattato
Mushroom Millefoglie
Puff pastry, porcini custard, halloumi, butternut squash puree
All served with rosemary and garlic roast potatoes, glazed carrots and parsnips and brussels sprouts for the table.
