Head Chef
As Head Chef, you will be responsible for all the highest professional quality food production, including all items produced for The Dining Room, The Inn & Library, outdoor Terraces, Room Service & Banqueting. Menu development, food purchase specification and standardised recipes. The Head Chef also leads the development and monitoring of food & team budgets, training, hygiene standards, and a culture of creative excellence.
Primary Duties
To plan and direct food preparation and culinary activities to the highest professional quality for all food production at the hotel. Including all items produced for; The Dining Room (60 covers), The Inn & Libary (approx. 70), Room Service (29 Rooms), Terraces (100 covers) & Banqueting (One event space with a capacity: dining 60 & reception 100)
To create, develop and update all menus in keeping with The Star’s culinary offering, quality expectations and ethos
To manage and monitor the requisition and purchase of all food products and other necessary supplies. Confirming the sourcing strategies are of the highest professional quality, seasonality and locally sourced where possible
Lead the development and monitoring of the food and labour budgets for the department, departmental training, hygiene standards, and a culture creative excellence.
